Just when I thought we might be getting an early taste of spring, a wicked winter storm rolled in this weekend and covered us in well over a foot of snow! On days like this, it’s nice to get a big pot of soup going to warm us up after a day of playing out in the snow. Using a slow cooker makes it even easier to create a hardy meal – softening the vegetables so that you can easily puree them into a rich and creamy soup.
